Apple tiramisu


Recipe for 4 persons

Time: 1 hour

Ingredients
200 g apples (e.g. Gala), peeled and diced
80 g apple juice
20 g sugar
¼ vanilla pod
1 tsp cinnamon
½ tsp ground cloves
1 tbsp cornflour
125 g mascarpone
125 g quark
100 g whipping cream
2 tbsp icing sugar
lemon zest
50 g sliced almonds
25 g sugar
10 g butter
1 pinch salt
100 g sponge fingers 


How to make it
For the apple compote: Peel the apples and dice them into small pieces. Caramelise the sugar and then douse with the apple juice. Add the diced apple and spices and cook until soft. Mix a tablespoon of cornflour with a bit of apple juice. Add it while stirring. Bring the compote to a boil briefly until the cornflour starts to thicken. Then pour into a shallow dish and let cool.

In the meantime, prepare the almond brittle: Melt the butter in a pan, add the sugar and caramelise until golden brown. Add the almonds and salt. Mix and spread on baking paper and let cool.

For the mascarpone cream: Whip the cream. Mix the quark and mascarpone well. Add the icing sugar, fold in the cream and season to taste with the lemon zest.

Tip
Add some cinnamon to the mascarpone cream. 

Serving
Crush the sponge fingers and layer into the glasses. Drizzle apple juice over the sponge fingers until soaked. Spread the apple compote over the top and cover with mascarpone cream. Chill for at least two hours. To finish, decorate with almond brittle.
