Madeleines

Recipe for 24 madeleines

Ingredients
175 g butter
175 g flour
150g sugar
1 g salt
8 g baking powder
1 zest of lemon
1 zest of orange
3 eggs
10 g honey
10 g butter or other fat (to grease madeleine tin)


How to make it
  • Melt the butter in a bain-marie or in the microwave. Leave to cool.
  • Sift the flour into a large bowl.
  • Add the sugar, salt, baking powder, lemon and orange zest to the flour. Mix well with a whisk.
  • Add the melted butter. Mix everything together.
  • Add the eggs and honey and mix well. The mixture must be smooth, creamy and with no lumps.
  • Then put the mixture in the fridge for one hour.
  • Grease the madeleine tin.
  • Spoon the mixture into the madeleine tin.
  • Bake in a preheated oven at 200°C for 13 minutes (fan oven 180°C, 10 minutes).
  • When the madeleines are golden brown and have formed their characteristic bump, remove from the oven.
  • Remove the madeleines from the tin and serve while still warm. They will be delicious!


Storage
The madeleines can be stored in a tin for maximum of two to three days. They can be frozen and defrosted at room temperature then reheated in the oven for a few minutes before serving.


Tips and tricks
Madeleines can be flavoured with vanilla or spiced up with sultanas or chocolate chips. They are best eaten warm, served with a spoonful of custard.

To make chocolate madeleines, simply replace 20 grams of flour with 20 grams of cocoa – that's it!
