Stir-fried vegetables with caramelised cashew nuts and feta


A recipe that's quick to prepare but still healthy

Ingredients
200 g broccolini
120 g mushrooms
160 g king oyster mushrooms
160 g spring onions
600 g Hokkaido pumpkin
100 g cashew nuts
40 g sugar
160 g feta
40 g olive oil
Salt and pepper


How to make it
  • Wash the vegetables and cut them however you'd like.
  • Caramelise the sugar and add the cashew nuts, then place on baking paper to cool.
  • Cut the feta into cubes and briefly bake in the oven at 200 °C until it browns slightly.
  • Briefly blanch the broccolini in salted water.
  • Add some olive oil to a non-stick pan and sauté the pumpkin in it.
  • After about two minutes add the spring onion and mushrooms.
  • For the final step, add the broccolini and stir everything together one more time, then season to taste with salt and pepper.
  • Serve in the centre of a plate or bowl.
  • Roughly chop the cashew nuts and sprinkle over the dish.
  • Take the feta out of the oven and scatter it over the vegetables as well.


Expert tips and tricks
Instead of broccolini you can simply use normal broccoli or other vegetables.
