Apple pie

Recipe for 8 persons

Time required
Preparation: 1 hour
Cooking: 1 hour and 30 minutes


Ingredients
Dough
375 g flour
1/2 tsp salt
3 tbsp sugar
180 g butter
75 g egg
100 g grated dark chocolate
1 tbsp cocoa powder

Filling
8 Belle de Boskoop apples
100 g sugar
½ lemon (juice)
60 g ground almonds
Pinch of cinnamon powder

Glaze
½ lemon (juice)
130 g icing sugar
20 g toasted almond flakes


How to make it
Dough
  • Place all the ingredients in a bowl and rub together with your fingers until it resembles breadcrumbs
  • Bring the mixture together to form a dough
  • Wrap in cling film and chill for 30 minutes
  • Roll out 2/3 of the dough to a 3 mm thick circle
  • Transfer rolled out dough to a 26 cm diameter pie dish
  • Trim off the edges
  • Prick the pie base several times with a fork and chill
  • Roll remaining dough to a 3 mm thick circle to cover the pie and chill

Filling
  • Peel the apples and grate with a rösti grater
  • Add the remaining ingredients and give everything a good mix
  • Spread the apple mixture over the pie base
  • Cover the pie with the rolled out circle and lightly press the edges together
  • Roll a rolling pin over the edge of the pie to seal the edges
  • Bake the pie in a preheated oven at 180 degrees for 25 to 30 minutes
  • Leave pie to cool

Glaze
  • Mix the lemon juice and icing sugar until you have a smooth, viscous glaze
  • Carefully turn the cooled pie out onto a cake stand
  • Pour the glaze over the pie and sprinkle with almond flakes


Tips and tricks
The best way to turn out a pie is to place a wire rack on top. Firmly hold the pie and wire rack together and flip it over so that the wire rack is now at the bottom and the pie at the top.
